Brief Job Description
The Chef de Partie is the assistant to the Head Chef & Sous Chef. He/She is responsible for filling in for the Sous Chef. The Chef de Partie must be a good all-rounder and have strengths in all aspects of the kitchen.

Roles and Responsibilities
-Working with the Head Chef & Sous Chef to ensure excellent standards and quality are maintained within the food areas.
-Implement & adhere to the HACCP plan ensuring that all statutory, as well as company, hygiene regulations are being strictly adhered to.
-To deputise in the absence of the Head Chef & Sous Cheft.
-To assist the Sous Chef that all chefs are familiar with the days requirements.
-To assist the Sous Chef insuring that the necessary stocks are on hand at the right quality and quantity.
-To ensure that each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature.
-Adopt high standards in personal hygiene and wear clean uniforms which are laundered regularly.
-To follow portion control & maximize gross profit margin product knowledge.
-Assist to Develop Menus.
